Tie Guan Yin Guo Xiang (Iron Goddess of Compassion, fruit aroma), AAA, spring 2019 is an Oolong from South Fujian, Anxi. It is made only by the most skilled tea technicians as it quite easy to destroy its flavour properties during production.
The aroma is sweet and fruity with a touch of fresh peaches and a creamy finish. The flavour is vegetal and fresh, slightly buttery and with a voluminous aftertaste. Reminiscent of fresh cut grass and ripening berries. Like an undisturbed early spring this Tie Guan Yin is innocent, tranquil and blissful. At first it feels very light, almost superficial, but every sip makes you wonder if there is a lot more to all of this than first meets the taste buds. It tempts the drinker to search beyond the obvious. Well-balanced and with a soothing effect.
Recommended brewing temperature is 85-95°С (185-203°F). Tea-to-water ratio is 5 g. (0.18 oz) per 100 ml. (3.5 oz) of water. It can be steeped up to 9 times. Best served in the afternoon.
