Tie Guan Yin Hua Xiang (or Iron Goddess of compassion) is produced in South Fujian, Anxi. According to one legend a poor farmer found an abandoned temple to the goddess Guan Yin (goddess of compassion), since he had no money to restore it, he did what he could to clean it and put a lantern inside to honour the goddess. One night the goddess appeared in his dreams to tell him that he will find a gift in the temple court for all of his efforts. The gift was a tea bush and the farmer used it to produce Tie Guan Yin. 

The heated leaf aroma is vegetal and fresh with a touch of floral notes. The flavour is mild and grassy with a hint of lilac sweetness. This Chinese tea is light and fresh. It soothes, relaxes and helps to refresh the mind.

Recommended brewing temperature is 90-95°С (194-203°F).  Tie Guan Yin Hua Xiang is best prepared in porcelain teaware. Tea-to-water ratio is 5 g. (0.18 oz) per 100 ml. (3.5 oz) of water. It can be steeped up to 8 times. Best served in the afternoon.
