Yin Jun Mei AA (or Silver eyebrows) is a Black Tea from Wuyishan. This tea appeared very recently - in 2005, it is made using a similar process to Golden eyebrows (Jin Jun Mei). And just like Golden eyebrows this tea is considered to have a special, unforgettable flavour. Yin Jun Mei is made using only buds which have just begun to open up.
Yin Jun Mei is all about “a little bit of… “ It is a little bit sweet and buttery and with a little bit of a tartness to it. The flavour includes raisin, berry and floral notes that are light, smooth, baked and velvety. The aroma includes baked floral notes that are sweet and toasty. Helps to balance out mood and mind, gently revitalizing. A great choice for a morning tea session.
Yin Jun Mei can be prepared in porcelain or clay teaware. Water is best heated to a temperature of 90 °С (194°F). The best brewing methods are Pin Cha or infusing. It can be steeped up to 7 times. Tea-to-water ratio is 5 g. (0.18 oz) per 100 ml. (3.5 oz) of water.
