Bing Dao Xiao Ding is a small densely pressed Shu cake. The dry leaf has a flavourful aroma that includes camomille, mint and sweet prunes. Once heated the leaf aroma acquires sweet, leathery notes along with cinnamon and black pepper. Goes down smoothly even though it’s quite thick in texture.
The taste is rich with strong nut and mustard notes and a long lasting aftertaste.
Best brewed in a clay teapot with thick walls using water at approximately 95-98°C. Can handle many steeps.
