A tea from “icy peaks”, one of the more famous Taiwanese teas. It is collected from bushes situated on moderately low mountains, approximately 800 meters in height. This tea is considered to be one of the more complex and remarkable teas from the island of Taiwan. Dong Ding is made out of tea flesh: a combination of four leaves and a bud.
It has a deep, rich pastry-like flavour with a touch of sweetness and a cherry aftertaste. The ideal tea to drink using a tea pair due to its stunning nut aroma.
This tea can be served during the afternoon or in the evening. It is long-lasting and meditative. Calms and strengthens the nervous system.
Dong Ding can be brewed in porcelain, clay or ceramic teaware. Recommended brewing temperature is 85-90 °С (185-194°F). It can be steeped in a thermos or prepared using the Pin Cha method. This tea can handle up to 10 steeps. Tea-to-water ratio is 5 g. (0.18 oz) per 100 ml. (3.5 oz) of water.
