Green & Yellow tea

Green tea undergoes a very small degree of fermentation (oxidation): after being picked it is almost immediately heated to prevent further natural oxidation from occuring. This results in the tea preserving its green colour and many of the health benefits found in the raw tea leaf.  

Green tea is considered to be the first tea that was produced. China is currently the leading manufacturer of Green tea, although iti is also made in Japan and Korea.
